Although no single food has the power to improve health, increase their consumption of fish is a way for us all to enrich their diet and to positively affect their health. Many studies on the benefits of fatty acids focus on fish that would be the main source. Salmon, sardines, tuna and some crustaceans are indeed rich in fatty acids. The word “essential” comes from Latin. Essential fatty acids are nutritional factors, they were discovered in 1929 at the University of Minnesota by George and Mildred Burr. Like vitamins, essential fatty acids are not synthesized by the human body and must therefore be made to the body via the diet.

Essential fatty acids
As noted above, the essential fatty acids are essential nutrients for good health of a human being. To understand what is truly essential fatty acids must be interested in a molecular point of view.

Omega fatty acids
Omega fatty acids are so named based on the position of the first double bond in their carbon chains. Thus, the first double bond of omega 6 starts at the sixth carbon before the end of the chain. The first double bond of Omega 3 starts at the third carbon position by the end of the chain. Once in the body, omega 3 and 6 are biochemically processed and control the bodies of two ways: first, they are incorporated into cell membranes, and second, they preserve the fluidity of these membranes optimally.
